A small loaf, already portioned.

Twelve separate rectangular cavities give brownies, cornbread and quick breads a different shape from a muffin. Both pans in this collection use silicone cups. The red pan folds easily and needs support underneath; the confetti model has an inlaid metal frame. Check your tray and oven space before choosing.

  • Choose the cavity shape before scaling a recipe.
  • Use a baking sheet under a fully flexible pan.
  • Let your bake set before lifting a corner from the mold.

Before your first batch

What is the difference between reinforced and flexible pans?

Reinforced models have a metal frame around the rim. Fully flexible pans bend more easily and need a baking sheet beneath them before filling. Both use silicone cups.

Do I need a baking sheet under silicone?

Use a supporting baking sheet beneath a fully flexible pan before you add the mixture. It gives you a firm base when carrying the batch. Follow the instructions for your specific reinforced model too.

Can I use the same time as a metal pan?

Silicone and metal can bake differently. Start with your recipe’s instructions, check doneness and record any adjustments for the pan and oven you use.
